Forty-Clove Garlic Chicken (with Mushrooms in White Wine) for Two

Garlic can be romantic!  Just make sure both of you eat some :)

Yes, FORTY cloves of garlic!  Roasted in their skins, these little cloves become mild and nutty-tasting.  When paired with  mushrooms and white wine, they impart a delicate flavor to the chicken and the au jus that results is a perfect foil for a loaf of crusty French bread.  Add some romantic music, light the candles and let the garlic work it's magic!

Forty Clove Garlic Chicken   (Serves 2)

4 small pieces of Chicken (2 breasts, 2 thighs - do not use boneless chicken, bone-in gives a much better flavor)
3 heads of Garlic, separated (40 cloves)
8 Mushrooms, sliced
1 t Tarragon
1 T Hot Paprika
Kosher Salt
Freshly Ground Pepper
1/4 c White Wine  (use the same wine that you will drink at dinner)

  1. Preheat oven to 325 degrees. 
  2. Place chicken in a pot that will fit all the pieces snugly. 
  3. Scatter garlic cloves over chicken. 
  4. Add wine. 
  5. Sprinkle tarragon, salt and pepper over chicken. 
  6. Add mushrooms slices.
  7. Dust with paprika, making it look pretty.
  8. Cover tightly and bake for approximately 35 - 40 minutes.
  9. Increase oven temperature to 400 degrees.
  10. Remove cover.
  11. Bake uncovered for 15 minutes or until browned.
  12. Remove from oven, replace cover and let rest for 10 minutes.
  13. Serve.
