Has this ever happened to you? You get an invitation to a friend's home for dinner, and you find out that dinner won't be ready for another 1-2 hours? Don't you hate that? Guests should be seated and fed within 30 minutes of arriving for dinner. Don't let that happen in your house. Next time you invite friends over, try this meal. It can be made ahead of time and popped into the oven just as the doorbell rings. Twenty minutes later, you will all be seated around the table, enjoying a lovely meal. Trust me, your guests will appreciate your thoughtfulness!
Grill the steak the day before, to very rare. Let cool and then place into the refrigerator for the next day. Next day, thinly slice the steak and arrange slices on an oven-proof platter. Sprinkle crumbled gorgonzola cheese atop the steak slices, cover with aluminum foil, and pop back into the refrigerator until party time. The Twice Baked Potatoes, Garlic Bread and Mixed Greens Salad can also be made ahead of time.
Preheat the oven to 400 degrees about 20 minutes before party time. When the doorbell rings, pop the steak platter, garlic bread and the potatoes into the oven. Go greet your guests, open some nice red wine (I like Red Zinfandel with this dish), pour a glass and enjoy the company of your guests. After 20 minutes, bring the steak platter to the table, along with the twice-baked potatoes, garlic bread and a salad of mixed greens.
