Weekends can be hectic, as you know. Places to go, things to do, chores, entertaining friends....there's always something to do. When time gets tight, it's tempting stop by the drive-through window of your favorite fast food place, or order pizza. This menu offers a healthier alternative and will save you money, too. All it takes is a little advance planning on Friday evening.
Friday evening roast a turkey breast and while that's in the oven, bake some bacon on a cookie sheet.
Meanwhile, create a platter with lettuce, tomatoes, avocado and a mayonnaise-dijon mustard-lemon juice spread.
When the turkey is cooked, allow to cool. Slice and arrange on a platter, along with bacon.
Place in the refrigerator overnight, so that it's available the next day when you have no time to cook!
You could do this part on Thursday, if you wanted to.
Having everything sliced and ready to go lets everyone serve themselves without a mess.
