Creamed Spinach with Eggs

This is my Mother's recipe.  It's a very good way to serve spinach and even people who don't usually eat spinach seem to like it. 



Creamed Spinach with Eggs

1 10oz pkg frozen Chopped Spinach, thawed with excess water squeezed out
1 Hard Boiled Egg
1 t Butter
1 chopped Shallot
4 oz canned Milk
Kosher salt and Pepper to taste

  1. Saute shallots in butter
  2. Add spinach to pan, stir
  3. Add canned milk, stir
  4. Add salt & pepper
  5. Remove from heat, add chopped egg.
  6. Stir gently, and serve.
