This is my Mother's recipe. It's a very good way to serve spinach and even people who don't usually eat spinach seem to like it.
Creamed Spinach with Eggs
1 10oz pkg frozen Chopped Spinach, thawed with excess water squeezed out
1 Hard Boiled Egg
1 t Butter
1 chopped Shallot
4 oz canned Milk
Kosher salt and Pepper to taste

- Saute shallots in butter
- Add spinach to pan, stir
- Add canned milk, stir
- Add salt & pepper
- Remove from heat, add chopped egg.
- Stir gently, and serve.
