Leisurely Sunday mornings are an easy indulgence. Take time to linger over the morning meal, and make the most of it by trying something new along with old favorites.
Today I made:
Tomato-Spinach Frittata
French Toast with Maple Syrup
Hickory Smoked Bacon
Fresh Strawberries and Blueberries
Iced Tea/Orange Juice

Tomato and Spinach Frittata Serves 2-4
1 t. Butter
2 green onions
1 cup fresh baby spinach leaves
4 white mushrooms, sliced
4 plum tomatoes, thinly sliced
1/4 cup shredded cheese (any kind of cheese will work here - Swiss, Cheddar, Muenster, Brie...)
1 slice Smoked ham, rolled up & sliced thinly into ribbons
4 eggs, beaten with 2 T milk
Kosher salt
Freshly ground pepper
Sauteed onions and mushrooms in butter. Add ham. Add in spinach, saute until wilted. Reduce heat and layer cheese over spinach mixture. Pour in egg/milk mixture. Do not stir. Arrange tomato slices on top. Cook slowly over low heat until eggs are firm. Salt and pepper to taste.
YUM! Mushrooms for breakfast gets a big thumbs up from me!
