Strawberry Orange Granola Muffins

This is a great alternative to packaged granola bars.  It takes just a few minutes to put together and bake, and you will have a week's worth of breakfasts that are homemade and delicious.

Much better than a foil wrapped granola bar!


Strawberry Orange Granola Muffins

Muffins (makes 1 dozen)

1.5 c flour
3/4 c granola
1/4 c dried sliced strawberries
1 t baking soda
1/2 t baking powder
1/2 t salt
3/4 c granulated sugar
1/2 c plain yogurt
1/4 c butter, melted
2 eggs
1 t orange extract

For the streusel:

1/4 c melted butter
1/2 c light brown sugar
3/4 c flour

Muffins
Preheat oven to 350 degrees
Line muffin tin with paper liners
In glass or ceramic bowl, melt butter in microwave
Add sugar and whisk until smooth
Add yogurt and whisk until smooth
Add eggs and orange extract and whisk until smooth


In separate bowl, combine the rest of the ingredients until well blended.
Add dry ingredients to wet, and stir until just combined.  Do not overmix.
Fill liners 2/3 full.

Streusel Topping

Melt butter in microwave
Combine brown sugar and flour
Pour butter into sugar/flour mixture
Mix with a fork until crumbly
Top each muffin with streusel mixture

Bake at 325 degrees for 20 minutes or until tops of muffins are golden brown.

Remove from oven and place pan on wire rack to cool evenly.

May be stored at room temperature in a covered container or frozen.  Thaw at room temperature or microwave 10 seconds.
